Happy Easter

As much as I love making fancy cakes and cookies, when it comes to family, I tend to stick with simpler desserts.  The recipe for this chocolate cheesecake slice was given to me by a playgroup mum over twelve years ago, when my husband and I moved back to Brisbane after years of corporate life in Asia, to raise our family.  I feel blessed to live in a place where there are plenty of opportunities to grow and be the best one can be.  This Easter, I pray that we will always remember that with hard work, and a whole lot of love, faith and hope, we have the capacity to become extraordinary human beings.

Chocolate Cheesecake Slice
 
Biscuit Base:
200g chocolate biscuit crumbs
80g melted butter
100g chocolate chips

Filling:
375g cream cheese
125g sugar
3 eggs
150g melted white chocolate

Topping:
150g melted dark chocolate
160g sour cream

Mix biscuit crumbs and butter, and stir until combined.  Spread into base of tin and sprinkle with chocolate chips. 

Beat cream cheese and sugar until creamy and smooth.  Add eggs gradually, beating well after each addition.  Add melted white chocolate.  Bake for 30 minutes or until the filling is just set.  Cool and refrigerate until firm.

Combine topping ingredients in a small bowl and stand over a pan of simmering water.  Stir until the chocolate is melted and mixture is smooth.  Spread evenly on top of cheesecake.  Mark the chocolate with a flat-bladed knife.  Refrigerate until set.

Eve Boutique Cookies

Black and white cookies for the elegant dessert table created by Sunshine Coast Lolly Buffets and Event Styling for Eve Boutique's re-opening. 
 
It took several tries to get the piping right.  I had originally piped the details on the fan and border of the rectangular logo cookies all black, but it looked too heavy and over-done.  To create a lighter feel, I used white in between the black details.  It took longer to do it this way, but well worth the effort.      
 



Confetti Fair for Little Birdie Events

One of the best part of what I do is collaborating with event stylists.  I've worked with the Gerri and Carole from Little Birdie Events on several occasions, and enjoyed every bit of the creative process. 
 
These cookies, cupcakes and coconut ice clouds were for their dessert table at the Confetti Fair in Brisbane earlier this year.  The cookies were based on their logo design.

... and so it begins

It's been awhile in between posts.  It's not that I haven't done much cakes or cookies, but just that in between baking and decorating, there's family. 

There's also the few weeks that I hem hawed around, trying to decide about having my blog re-designed.  Well, I finally took the plunge.  Here is the new blog, designed and installed by Smitten Blog Designs.
